April Cocktail Link Up + Skinny Key Lime Pie Martini

Hey Gals! It's the second Tuesday of the month, which means it's time for our cocktail link-up party! We are excited to see all of your recipes for this month and share our own with you. Since Spring is finally in the air, we decided to lighten things up with our Skinny Key Lime Pie Martini. It's perfectly tart, a little bit sweet, and luckily, not too decadent, so you don't have to worry about bikini season being right around the corner.

1 part (shot) vodka
1 part whipped cream vodka
1 part fresh lime juice (1-2 fresh squeezed limes)
1 part low calorie coconut juice (we recommend Bai 5 - it's so good!)

Combine all ingredients in a cocktail shaker filled with ice

The secret here is the fresh lime juice and the (almost) no calorie coconut juice

The combination of regular vodka and the whipped cream vodka keep it from being too sweet

And don't forget to garnish your glass! We went with a graham cracker rim, fresh slice of lime, and a dollop of fat free cool whip

  2. YUM! My husband and I have a favorite drink at a restaurant chain in our area and it's their key lime martini. We'll order it for "dessert" instead of an actual dessert because it's so delicious! I might need to try this recipe!!
