Slow Cooker Beer Pulled Pork



The calendar says it's spring, but Mother Nature hasn't quite caught the memo in NYC yet. I've been craving some warm weather barbecue food and can't wait to host my friends for some grilling on my patio this spring but until then, I've been relying on this pulled pork recipe to satisfy my barbecue cravings. I'm all for the ease of anything made in a slow cooker, plus the beer in this recipe makes the meat even more delicious and juicy (plus, what's the point of a barbecue without some ice cold beers to wash it all down?).

Slow Cooker Beer Pulled Pork

Ingredients
* 4 lb. pork shoulder
*12 oz. bottle of beer
* 6 oz. barbecue sauce
* 1 medium onion, chopped
*  2 garlic cloves, chopped
* 1 teaspoon onion powder
* 2 teaspoons salt
* 1 teaspoon pepper


Instructions
* Place the pork in the slow cooker, and layer it with the chopped onions and garlic.

* Season the top of the pork with the onion powder, salt, and pepper.

* Pour the beer into the slow cooker.

* Cook on low for 8-10 hours.

* Take the pork out of the slow cooker and shred the meat with two forks. Remove the bone.

* Return the shredded pork to the slow cooker; mix in the barbecue sauce and cook on low for 1 additional hour.

* Serve over rice, or on a potato roll.
