June Monthly Cocktail Link Up + Strawberry Mojito Recipe

Hey Gals! Another new month is upon us which means it's time for our monthly cocktail link-up! For this month's recipe, we decided to embrace all that is seasonal, and mix some delicious strawberry mojitos! Mojitos can be a bit labor intensive thanks to all of the muddling that you need to do, so we decided to make this one by the pitcher, which is perfect for all of your summer entertaining - no need to constantly mix drink after drink, just make before your party starts and then pour and serve as needed!
 


It doesn't get better than fresh herbs right from the garden!



The magic of this recipe are the delicious fresh strawberries and mint

 

Take a handful of your berries, cut off the stems, and toss into your pitcher with the juice of a lime or two, and a couple sprigs of mint


I don't like mine overly minty, but feel free to add more based on your preference.  Most mojito recipes call for adding sugar in, but I thought the strawberries were plenty sweet on their own, so I skipped that all together.


Next, muddle up fruit and mint until it becomes nice and pureed.  And no need to use any sort of fancy tools - I found that my old wooden spoon worked perfectly!


Next, add about a cup of rum - to make these extra fruity, I used Strawberry rum, though regular works great as well.


Lastly, fill about 3/4 of the way with ice and top with some club soda.

Give it one more whirl with your spoon and you're ready to serve! 


Ingredients (makes 1 pitcher, which serves approx. 4 drinks):
  • 1 cup of rum
  • 4-5 springs of fresh mint
  • 1 cup of washed and cut strawberries (I used about 8 whole strawberries)
  • 2-3 limes
  • Club soda
  • Ice

Recipe:
Muddle your strawberries, mint and juiced limes in your pitcher with a big wooden spoon until pureed.  Add your vodka, then fill 3/4 of the way with ice and top with club soda.

  11. I feel bad. I never link up bc I dont really drink cocktails. Sometimes I will have some sangria but for the most part I just drink prosecco or champagne. I do really enjoy reading your recipe posts though. Your photographs in this one are spectacular! I am really impressed!

  21. Oh my goodness this looks AMAZING! Can you believe the first time I tried one was a few months ago in Vegas and I loved it! I had a strawberry cucumber mojito that was out of this word, but this looks like it's SO good too...YUM!
