Mediterranean Orzo Salad



It's not an exaggeration to say that I am utterly, totally, completely obsessed with this pasta salad, and I think you'll love it, too!


I first encountered this yummy dish during the first meeting of the Crockpot Club and I have been on a mission to recreate it ever since. I'm always up for any recipe that includes artichokes, and I absolutely love the versatility of this salad - it's a fantastic side, but thanks to the chickpeas, it's also hearty enough to stand on its own as a meatless meal. I like to keep a big batch in the fridge that I can portion out to bring to work for lunch, and also have an easy side dish on hand for dinner.



Mediterranean Orzo Salad

Ingredients
*1.5 cups orzo
* 1 teaspoon minced garlic
* 16 oz. chickpeas
* 6 oz. artichoke hearts
* 1/2 cup oil-packed sun-dried tomatoes
* 2 tablespoons white wine vinegar
* 1 teaspoon Dijon mustard
1/4 cup extra-virgin olive oil
* 1/4 cup parsley, chopped
* 1/2 teaspoon dried marjoram
* 1/2 teaspoon salt
* 1 teaspoon pepper


Instructions
* Cook the orzo according to package instructions, then drain and rinse under cold water.

* Mix garlic, vinegar, mustard, marjoram, olive oil, salt, and pepper in a bowl until well-blended.

* In a separate bowl, combine the cooked orzo, chickpeas, artichoke hearts, sun-dried tomatoes, and parsley.

* Pour the dressing over the pasta mixture, and toss to combine.
